And it's one I've successfully thrown together last minute on a few occasions in unfamiliar kitchens. Hark at me, Marie Berry or what? So, it's a Delia recipe, which I've lost time and time again. The number of times mummy Stylonylon has texted, emailed and noted down this recipe, I blush. I could make it off the top of my head, if only I could remember the measurements. The rest is easy-peasy. (Once baked, don't worry if it's not the cleanest knife, once it cools it'll be nice and perfectly moist.)
Ingredients
2 small apples
110g walnuts, roughly chopped
110g pitted dates, roughly chopped
110g wholewheat flour, sieved
110g plain flour, sieved
1 1/2 teaspoon baking powder
120g soft brown sugar
2 eggs lightly beaten
approx 200 ml milk
How to:
Pre-heat oven to 180 degrees (gas mark 4).
Chop the apples, dates and walnuts.
Sieve the flours and baking soda into a bowl.
Stir in the sugar.
Make a well in the flour and add the whisked eggs.
Mix in the softened butter, creaming the mixture.
Add the apples, dates and walnuts and mix in with the milk.
The mixture should be quite sticky.
Butter a loaf tin and pour the mixture in.
Bake for one hour.
